Meat-free Monday Tomato and Goats Cheese tart

1 Roll Paneton Flaky Pastry
4 eggs
250g ricotta
100g goats cheese
2 packs of vine tomato’s
Salt and Pepper to taste
Fresh herbs to finish (basil, parsley or thyme)
Preheat oven at 180 degrees.
Grease tin.
In a bowl mix eggs, ricotta until smooth season to taste.
Place pastry gently into tin, pressing as you go.
Add egg mix.
Place crumble goats cheese on top of egg mix.
Place tomato’s into mix, vine still attached.
Bake for 20-30 minutes until egg mix has set and pastry cooked through.
Dress with herbs and serve with a green salad
